When I was a teenager I used to LIVE off of protein bars- specifically the NUGO Salted Pretzel flavor. I used to say it was like eating a “healthy” candy bar since it was gluten/dairy free, but healthy is FAR from what those protein bars were. Sure, they were gluten and dairy free, but they were also filled with a ton of sugar and preservatives… no wonder I had gut issues and awful acne- I was living off of processed crap. 😬 Nowadays, there are better alternatives when it comes to protein bars that don’t contain gluten, dairy, sugar, soy, etc. However, when push comes to shove, it’s always better to make your own! 


I still hold a soft spot in my heart for protein bars, which is why I’ve started making them from scratch! That way I know exactly what is going in the bar, I know they are being made with nourishing ingredients that will fuel my body, they are free from preservatives, and I save SO much money.

These peanut butter oat protein bars are the perfect addition to your weekly meal prep. They are no-bake and take about 30 minutes to whip up, plus they contain 9 grams of protein per bar! You can eat them as a pre/post-workout snack, for breakfast, or even when you’re simply craving something sweet! 

These protein bars are free from gluten, dairy, AND sugar, so they won’t leave you crashing a couple of hours after eating them. They also contain healthy fats and fiber which will keep you satiated longer!

The best homemade protein bars that contain 9 grams of protein per square! Gluten, dairy, and sugar free- get ready for everything you could wish for in a protein bar.  




Oat Base 

- 1 cup gluten free rolled oats 

- 1/2 cup peanut butter

- 1/4 cup monk fruit sweetened peanut butter powder

- 2 teaspoons vanilla extract

- 1/2 teaspoon monk fruit drops

- 1/4 cup melted ghee or coconut oil 

- 1/4 teaspoon sea salt 


Chocolate Topping

- 1 cup monk fruit sweetened chocolate chips 

- 1/2 teaspoon coconut oil 

- 1/4 teaspoon sea salt


Peanut Butter Drizzle

- 1/4 cup creamy peanut butter

- 1/2 teaspoon coconut oil 

- 1/4 teaspoon monk fruit

- Pinch of sea salt




  1. In a medium bowl, add the ingredients for the oat base and mix until combined. 
  2. Add a piece of parchment paper to an 8X8 dish so that the paper is hanging over the sides. 
  3. Press the oat mixture into the pan and set aside. 
  4. In a small saucepan, add the chocolate topping ingredients and melt over low heat, stirring constantly until the mixture has melted. 
  5. Pour the melted over the oat base and spread evenly. 
  6. Add the ingredients for the peanut butter drizzle to a small saucepan and heat over low heat, then drizzle over the top of the chocolate. 
  7. Top with flaked seat salt and put the pan in the freezer for about 20 minutes or until the bars have hardened. 
  8. Remove the bars from the pan and cut into 10 pieces- enjoy!

NOTE: Store in a ziplock bag or airtight container in the freezer for up to 6 months or in the refrigerator for up to two weeks.
